After a small mini meet, we decided to have Sunday dinner together. The first thing we had to do was make the dessert. We decided that an apple sauce cake would be perfect to coincide with the time change. The challenge was to use the least amount of sugar while producing a perfect result. The first thing we had to do was decide on which mixer to use. This magnificent Sunbeam labeled for Montgomery Ward was up to bat.

We baked it in an 8 inch round springform pan. This delectable cake has raisins and walnuts, as well as some of that good vanilla from Mexico. Out of the oven and cooling.

The small bowl was used to make the cream cheese frosting with a teaspoon of brandy. A circle of walnuts on top of the cake, and it is ready to serve.

Meanwhile, the pork roast completely coated in house seasoning, is surrounded by cut gold potatoes, sweet yellow onions, carrots, and russet potatoes with the skin on. A low and slow at 320° for 4 1/2 hours.

A gas oven produces the most wonderful results. The fat cap on top of the roast has completely rendered. The potatoes and onions are browned where they touched the bottom of the pan. The carrots are perfectly cooked without being mush. The pan juices, and a little roux, made a delicious gravy.

And now, for a slice of that delicious cake. If anyone asked me for the recipe, I would not be able to give it to them. Simply because I couldn’t tell you the quantity of anything I used. If you asked me, how much flour did I put in, I would say “enough”. That’s not really something you could go on.

And there you have it. A beautiful ending to a lovely Sunday with close friends. The cake is so moist that Joan Rivers would be jealous.

We had a vacuum cleaner collectors Super Bowl party, and I made brownies. Martha Stewart’s recipe. It was the pink mixmaster that did the job that day.
