I made my husband his favorite dinner for our 7th Anniversary. Bason Wrapped Roast Pork Loin, stuffed with sourdough dressing, roasted on a bed of carrots, onions, and potatoes. The top has bacon grease spread on to help the roast brown.

It came out spectacular. The drippings made the best gravy. It was a lot of work, but he's worth it.

I never thought of wrapping it with bacon. I bet that is wonderful. I love pork loin and it's amazingly affordable. Around here, you can pick up a whole pork loin on sale for well under $2.00 a pound. When I buy one, I usually cut half of it into nice, thick chops, which I like just as well as a steak, and leave the other half as a roast, which I like to cook on the rotisserie in the grill.
