Since I was throwing a Fourth of July dinner party anyway, I thought I would let my friends help me make salsa. The juice master machine needs a lot of arm power. Too bad KitchenAid doesn’t make one to attach to the mixer.

Let’s start with 15 pounds of Roma tomatoes.

another variation that is nice is made with fire roasting the vegetables. In case you're interested, I have a link. The roasting can add a very nice smoky flavor.

Ditto on the “fire roasting”!

That’s actually similar to my alternate method of making salsa, but I like to do the roasting in my smoker with a few wood chips.

Also, Tom, I started using a similar strainer only about 5 years ago and I’ll never go back! My salsa reduces so much quicker in the pot with the liquid separated from fruit pulp.
