Recently, we approached lunch, beverages........
So, I know a lot of folks associate cookies with Christmas holidays,
But, I was wondering, does anyone bake cookies? Do you have a favorite or two? Share with the class?

Christmas does not have a monopoly on cookies! I enjoy cookies year round :)

Granted, I'm usually too lazy to make my own, but I do on occasion.

John you probably know by now that I bake all the time. At Christmas I bake lots of cookies to give as gifts to friends. Here are three different kinds. 
1) cheese straws for those that want savory as well as sweet

2) chocolate sugar cookies with a white chocolate drizzle

3) cut out cookies decorated with different stuff. Christmas trees, mittens, and blue snowflakes. 

 

plus

4) a red velvet cake for a friend that prefers cake to cookies

I make my grandmother's recipe for Oatmeal Chocolate Chip cookies once or twice a year. I'm not a big sweets guy, so if the mood for cookies hits me I'll make a batch

Irish soda bread (weekly), banana nut bread, zucchini bread.
Also, during an "online class", they asked for it.. pepper cookies. nice, fresh, and moist.
It'll be fun.

I also make a lot of home made spaghetti sauce ... regularly. I'm looking into putting some of it into glass Mason/Ball jars.
My good friend, Heather A. does that every summer with her homemade chili sauce. I'll be visiting Heather and her husband this August. I'm sure I'll be bringing treats from the Pittston kitchen.

Being diabetic, I do my best not to have sweets in the house, much less manufacture them. Admittedly, I'm not always successful in this effort because I'm a total sugar addict. Honestly, if there were a "Sugar Anonymous", I'd be there for sure because it is my drug of choice.

I like to make lemon bars sometimes.
Not the wretched box mix trailer-chow kind,... only from scratch, with a good thick layer of shortbread and extra-tart lemon topping. I hop it up with an alarming dose of lemon extract and, believe it or not, Kool-Aid lemonade powder.
You can always cheat and just make the shortbread and buy a jar of good lemon curd to put on top. It’s close enough when you just want a quick snack.
I’ve been thinking about making peanut butter cookies lately. 🤔
For the holidays I just make classic sugar cookies with the old vintage cookie cutters, thumbprint cookies, and those white balls that have several names, Polish wedding cookies/snowball cookies, etc,...
Those are the cookies Grandma always made, so that’s what everyone wants.
Oh, and it’s not really a cookie, but if you’re looking for a fun sweet treat to make, Josh Weissman has a good Pop-Tart recipe on YouTube.
All his recipes are excellent and simple.

Well, yeasterday, I had some free time.

Actually, I wanted to use up the chocolate chips and the unopened bag of unsalted potato chips (bought to make these) on the counter. It didn't take long at all to 'soften the butter. So, in the dead heat of Summer, I made 9 dozen cookies, both potato chip, and Toll House cookies. They'll freeze well, and will be nice to have on hand if anyone arrives at the door. They'll also keep my aunt happy...she's a 'cookieholic'.. is that a word?
Watching TV, she'll say, "Wouldn't it be nice to have a little cookie or something"?
Now, there is.
