BUTTERMILK PIE

A thousand thanks to Hans Craig for posting this recipe on Facebook. I knew I'd have to try it right away. It surrrrrrre is delicious!

A couple of notes -- someone had suggested using brown sugar, so I tried dark coconut palm sugar. Next time I think I'll use the lighter variety as the dark has a somewhat penetrating flavor like molasses. I think I'll also add a pinch of cinnamon and a dash of nutmeg.

As for the buttermilk, you really cannot get decent buttermilk out here. The powdered stuff I used is pretty good in recipes if you reconstitute it in whole milk instead of water. That gives it a creamier taste and texture.

There IS a crust underneath! But the filling puffed up so light and fluffy that it pretty much covered the crust.

Try it -- You'll LOVE it! It's very easy to make!!
