I found myself in the mood to bake cookies. I have a few favorites: Spiced Windmill Cookies, Peanut/Cashew Butter Cookies, Spiced Molasses Cookies, Ethereal Oatmeal Cookies ("as light as a feather")... I decided on Spiced Molasses Cookies because that's the easiest recipe!

After I baked the first batch and set them out to cool, I took the dogs out. When I came back inside, Oh Lordy! I almost swooned from the heavenly, spicy scent filling our apartment.

 

SPICED MOLASSES COOKIES

3/4 cup shortening
1 cup coconut palm sugar
1 egg
1/3 cup molasses
2 cups all-purpose flour
2 tsp baking soda
1/3 tsp salt
3/4 tsp ginger
3/4 tsp allspice
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp cinnamon

Beat shortening, sugar, egg and molasses. 

Add in dry ingredients and mix well. 

Chill for 1+ hour.

Roll into 1 inch balls, roll in coconut palm sugar.

Bake at 350 degrees for 10-12 minutes, until slighty crispy around the edges and soft in the centers.

OH MY GOSH----My FAVORITE cookies!!!!My Mom taught me to make these when I was little.Havne't made them in a while.I don't have palm sugar-so I have to make do with regular sugar.The stores here don't have palm sugar.And at one time when there was no scare about eating raw egg products----used to eat the RAW cooky dough!!!!Was VERY good-even uncooked.I cook my cookies a little longer-like the mbrowned and crisp.I HATE those soft cookies made today.Prefer mine crisp and hard like dog biscuits!Is there a difference between Palm sugar and regular-and what is it?Curious minds want to know!Lasst time I made these was with my Viking Mixer-the rototiller in a bowel!You can till your garden with that thing-10A motor!
