Is WD-40 White Lithium Grease spray the proper one to use to lube dry bearings in older Kirbys? How much needs to be used? Should I attempt to do this myself?

Personally I would prefer to replace them since they are still easily available.
If the races are loose then they are worn and need replacing.
If they are still tight, remove them and soak them in solvent to remove all of the old dry stuff. Then repack them with grease. A spray lithium grease would work but I would prefer fresh automotive wheel bearing to stand up to high speed and temperatures.

forgot some things...

If you are good with tools and have good mechanical reasoning and hand strength, you should be fine. Lubing the bearings means tearing the whole unit down. You cannot do it any other way. Good time to completely restore it if needed/desired! Removing the back breearing requires a puller tool.
Fill up the bearing races with grease if you repack them.
