Does anyone have a picture of the exhaust side of the roll easy and how it goes together? I can't figure out if there's a screw missing or something else. I've got the cover and a circular plate...

Pretty straight forward; you probably figured it out already.

 

You have all the parts but the lid has separated from the rubber plug. It appears your plug and it's support bracket is still inside the exhaust port. The rivet failed.

 

The rubber plug is held snug by a 4-tab steel spring riveted through the cap to the large aluminum plate. Plug is shaped with a central peak like a big black Hershey's Kiss. The cap is held on by the rubber plug snapped into the first inner edge of the port. The exhaust is then directed outward through the muffler felt packed inside the wheel and exits from the inside rim of the wheel.

 

Inserting the hose end blocks the inner wheel passage, captures all the exhaust flow and none exits the wheel rim.
