A friend posted about an entree he enjoyed at a restaurant in London called "Bubble 'n' Squeak." Intrigued, I googled it. It sounded good so I thought I'd try it -- especially since I had all the left-over ingredients at hand from Thanksgiving dinner.

The name comes from the fact that the cabbage supposedly "bubbles and squeaks" when it's cooking. However, I have to say I didn't hear any such sounds emanating from the skillet when I made mine!

I used mashed potatoes instead of sliced potatoes because that's what I had. I doubt it made any great difference.

Also, I kinda cheated -- instead of trying to turn it over per the recipe, I just stuck the cast-iron skillet under the broiler on High for a few minutes.

I served it with fried eggs and leftover jellied cranberry chutney.

So, here ya go ... Try it! You'll like it!!

BUBBLE 'N' SQUEAK

1/2 medium head cabbage, sliced
3 slices bacon, diced
1 onion, thinly sliced
1 cup cubed cooked ham
1 tablespoon butter
3 cups potatoes - baked, cooled and thinly sliced
1/2 teaspoon paprika
salt and pepper to taste

In a medium saucepan, cook cabbage in a small amount of water for about 5 minutes, or until tender. Drain, and set aside.

In a well-seasoned cast iron skillet, cook bacon and onion until onion is soft and bacon is cooked. Add ham, and cook until heated through. Add butter, then mix in the cooked cabbage and potatoes. Season with paprika, salt, and pepper. Cook until browned on bottom, turn, and brown again.

That's very similar to my Mom's hash except it's with corned beef.
