A couple of years ago Arlee got a great little 3-cup Cuisinart food processor. I have to say, I don't know how I'd manage without it now. I use it ALL the time when I need a food processor for small batches of stuff, without having to climb up on a step-ladder and pull down the full-sized food processor stored above the cabinets (along with a bread maker, large crock pot, waffle iron, turbo oven, etc. etc. etc.)
For example, it's great for preparing boiled eggs for egg salad: As long as you don't over-process the eggs, the texture is absolutely light and fluffy! After working cleaning and arranging the garage all morning, we had a cool and refreshing lunch of light & fluffy egg salad sandwiches, potato salad (store-bought but doctored up a bit) and sliced figs drizzled with fig-infused balsamic vinegar. Here's my LIGHT & FLUFFY EGG SALAD recipe: 7 large eggs – boiled, cooled & peeled 1 stalk celery, finely diced 3/4 cup scallions, finely diced (white tops only) 3/4 cup mayonnaise* 1 tbsp sweet pickle relish 1 heaping tbsp pimentos, finely diced 2 tsp Colman’s dry mustard powder 1 tsp Paprika 1/4 tsp Bay Seasoning 1/2 tsp poppy seeds Salt & Pepper to taste Process boiled eggs in your food processor just until crumbled and fluffy. (If you're using a small processor, do 3 eggs at a time.) Don’t over-process, or the eggs will get sticky and pasty. Set aside. Dump the chopped celery and scallions into a nice serving bowl. Add all the other ingredients except the chopped eggs. Blend thoroughly. Add the chopped eggs. Carefully and gently mix, just until combined. Don’t over-mix. Serve on hamburger rolls with mayonnaise, lettuce, sliced tomatoes and spicy mustard. ~~~ *Adjust mayonnaise quantity up or down according to egg size. There should be sufficient mayonnaise to cover all the ingredients and pull them together, but no so much that the mixture is wet and gooey. |
