CROCK POT BBQ BAKED BEANS

6-8 cans of a variety of beans – Great Northern, Pinto, Black, Kidney, etc. – to yield about 10 cups. (Read the labels and avoid those with sugar or high fructose corn syrup.) DRAIN the beans. Otherwise, the sauce will be thin and runny.

1 small sweet white onion, chopped
1/2 med. green bell pepper, chopped
1/2 med. yellow bell pepper, chopped
4 cloves garlic, chopped
6 strips thick-sliced bacon, cut into 1” pieces

Two 16- to 18-oz bottles of your favorite prepared
   BBQ sauce, doctored with:
2 tbsp prepared brown mustard
1 tbsp molasses
1 tbsp brown sugar (omit if the sauce is already sweet)
1 tbsp cider vinegar
2 tsp Liquid Smoke
1 tsp Tobasco (or to taste … but be careful: the heat
   increases as the beans cook!)
Juice of one fresh lemon
2 tsp Fresh-ground black pepper
Salt to taste

Dump everything into a large crock pot, mix, and cook on LOW for 8 hours or overnight.

(Note: If you're concerned about the "side effects" of baked beans, look for a product called Beano. It'll be in the spice aisle of your grocery store. To that end, so to speak, you can enjoy this story while your beans are baking! (See link.)
