CRAB PIE
(Thanks to Tenna Collier Safrit & Mark Hudgins from Gywnn's Island, Virginia for this recipe)
2-1/2 cups crab meat (fresh lump meat if possible)
4 eggs
2 tbsp flour
1/2 cup mayonnaise
1/2 cup sour cream
1 cup milk
1 cup shredded cheddar cheese
1 cup shredded Swiss cheese
1/4 cup chopped celery
2 tbsp minced onion
1 tbsp minced green pepper
2 tsp pimentos
1 tsp Old Bay Seasoning*
1 tsp mustard powder
Paprika for garnish)
2 nine inch deep pie shells (thawed if frozen)
Use a fork to prick each pie shell about a dozen times. Bake at 350 degrees F for 5 minutes. Cool.
Meanwhile…
Combine eggs, flour, mayonnaise, sour cream and milk and mix well.
Stir in the rest gently.
Spoon crab mixture into pie shells and dust with paprika.
Bake on a cookie sheet at 350 degrees F for 50 minutes or until a butter knife comes out clean.
Remove from oven and allow to cool for about five minutes before serving.
*If the crabs were steamed with Old Bay, omit this.
