Independence Day Cookout
We had:
Dry-rub pork ribs
Barbecue chicken
Barbecue baked beans
Creamy potato salad
Deviled eggs
Elotes (Mexican corn on the cob)
Pan de sol
Watermelon
Patriotic Pie
About the Elotes: Elotes are a staple of Mexican street vendors who sell them from rolling carts. There are probably as many ways to prepare Elotes as there are people who prepare them. Some versions call for mayonnaise, which I eschew. To me, mayo on corn just seems gross somehow. How I did mine was to shuck and rinse the cobs, placed each one onto a sheet of aluminum foil, liberally brushed with softened butter, sprinkled with freshly grated parmesan cheese, drizzled with fresh lime juice, dusted with chili powder, rolled up the foil and roasted them on the charcoal grill.
About the Patriotic Pie: I was just going to make another of my Strawberry Cream Pies when I saw a photo on my friend Roger Ballenger's Facebook Page of a friend who styled his pie into a representation of Old Glory. I liked the idea and used the same recipe to make mine as my Strawberry Cream Pie, with the added blueberries which we just happened to have on hand. I hope it tastes as good as it looks!
I hope all my American friends had a memorable and meaningful celebration of our nation's independence.
